The Chef de Cuisine for the Selkirk Restaurant oversees the preparation and delivery of high-quality, casual dining experiences that align with the standards set by Heritage Park. This includes creating and executing menu items, ensuring consistency in food quality, and managing kitchen operations for both venues. Lead and mentor a dynamic team, ensuring smooth kitchen operations, maintaining food safety standards, and contributing to an exceptional dining experience for our guests.
Responsibilities:
Kitchen Management
Create, write, and execute menu, ensuring they reflect the venue’s concept and seasonal offerings
Adhere to established food and labor costs while maintaining creativity and quality
Prepare and present food according to standardized recipes and procedures, ensuring consistent quality, taste, and presentation
Oversee the training and direction of casual and seasonal culinary team members
Work closely with front-of-house staff to maintain high standards of customer service, including addressing any culinary-related questions, special requests, or dietary accommodations
Ensure smooth communication between kitchen and front of house service teams
Ensure all food handling and kitchen operations adhere to Heritage Park policies, AHS guidelines, and safe food handling practices
Maintain a clean, sanitary, and organized kitchen environment, and ensure all equipment is in good working order
Provide support to other sections of the Kitchen and Culinary Services department as needed, maintaining flexibility in a fast-paced, team-oriented environment
Monitor and maintain food and labor costs in line with Heritage Park’s established budgets, taking proactive steps to improve efficiency while maintaining quality and guest satisfaction
Communicate effectively with colleagues, supervisors, and other departments to ensure smooth day-to-day operations
Uphold Heritage Park’s code of conduct, maintaining professional relationships and fostering a respectful, safe, and positive working environment for all team members
People Leadership
Lead by example by providing day-to-day support to direct reports to enhance expertise and professional growth
Foster a positive, collaborative environment that encourages learning, growth, and a high standard of kitchen performance
Conduct regular check-ins and provide feedback to ensure that direct reports are meeting performance expectations and achieving objectives
Assess areas for development and provide open and respectful feedback in a timely fashion
Work with direct reports to create annual SMART goals and track and ensure regular communication for on-time goal delivery and completion
Analyze current processes and procedures and provide recommendations for process improvements, internal procedure changes and best practice applications to the Director of Culinary Services

Contribute to inspiring and immersive experiences at the Park through your roles and responsibilities by engaging in Heritage Park initiatives that align with the overall mission and vision of the Park

Required Qualifications:
Completion of post-secondary education from a recognized culinary school is required
Possession of a Journeyman Certificate or Alberta Red Seal is required
Minimum of 4 years of progressive experience in within the culinary industry is required
Managing a team in a Chef role within a restaurant environment is required
Financial management including creation, monitoring and reporting on budget/costs
Possession of a valid class 5 driver's license is required.
Excellent communication, negotiation and interpersonal skills, with the ability to build rapport, influence stakeholders, and represent Heritage Park
Demonstrated strong interpersonal and communication skills in a client-faced setting
All successful candidates (over the age of 18) will be required to go through Police Information Check as a condition of employment.
Special Clothing and Equipment:
Appropriate uniform and safety equipment will be provided by Heritage Park; and
Footwear, as designated by the Heritage Park Costume Department, will be provided by the employee.
Special Working Conditions:
The position will be exposed to weather extremes and will work both indoors and outdoors; and
This position is physically demanding, and the incumbent must have the ability to lift heavy items, stand for long periods of time and walk throughout the Park for extended periods
Hours of Work:
The standard hours for this position are 40 hours per week;
The schedule will generally be five consecutive days per week (Monday to Friday); and
Holiday, evening, and weekend work is required
